Is it possible to assign a group of settlers to a livestock pen? As in I can make them gather automatically all the fattened animals, and go idle when there's none, and as soon as they're fattened they go ahead and gather again. Because if there isn't, livestock pens require a lot of micromanagement, right?

Exactly, if there are fat cows they will (ostensibly) slaughter the nearest fattened cow near to them. This doesn't work very well, however, when a map has too many units on it. You might notice in some games with many players as people start maxing out their populations, things like attack-move or move-all-military stop working so well. This goes for automatically retasking on a fat cow. The best way to do this is simply to tell your settlers to slaughter the cows one at a time in succession using the SHIFT key. They will simply execute the orders in the order you command them as soon as they are finished with the previous command.
