Could you give possible examples of how tey would be orginizationally/strategically different?
I'll make an attempt to answer but it is hard to say given all the gameplay considerations they'll be making. Aztecs for example were often just trying to capture enemy troops alive to be sacrificed. For the Inca's it was more like warfare as we know it.
Aztecs,
- Capital/Home City : 2nd Fastest shipments after the Inca (Inca had Llamas to help transport goods, and better boats).
- Combat victories either should gain Aztec player more resources cards, or gain experience more quickly than European civ's. Military cards I would imagine would be more readily available even in the early game?
- Chinampas : A farm that could be planted on lakes, ponds, marshes, etc. These would be extreamly productive. I imagine in maps without water, they could plant traditional farms instead though. But that does fit with what they said about 'home field advantages' for the new civ's, on their Mesoamerican maps lakes and such would be common.
- Livestock Pen: Turkey, Small dogs. Food from livestock pens would not be as nearly important when playing as an Aztec.
- Military : It would make sense if the experience of specific units caused them to upgrade automatically, (especially with more elaborate costumes) but given the fact they would have to make a lot of different Age specific units that might be impossible. Perhaps they could make the units damage and hitpoints increase with experience? Failing that though, their military units should at least be the cheapest in the game and train in large groups. Would also make sense also if their ground units moved abit faster, I've read about them being able to accomplish some very quick marches. In the first age maybe they could capture horses and artillery somehow?
Their Navy would start out as the weakest, and the Inca's would be 2nd to last in that department.
- Economy : Might be able to make a case that Stone should return as a resource for the Incas, Aztecs and Iroquois in the first age or two instead of coin.

-Experience and Cards would focus on military.
-Citizen/Settlers would be especially productive on their own, as the Andean/Incan peoples were very hard workers. Faster harvesters of resources, and fast builders.
-Terraced Farms: Be able to build farms on any land surface that isn't a cliff face or forest. Farms should be very productive, but not as productive as the Aztecs.
-Plantations or Alpaca Ranches : Cotton or Alpaca which were raised for their wool in large numbers. Both could generate coin.
-Livestock Pen: Llamas (could also include Alpaca and Ducks), in later ages though I imagine you could just get Cows? which would make sense historically.
-Houses : All houses should generate food at a constant rate. This is because Guinea pigs were constantly living off table scraps in nearly all homes, and were a very important food source. Perhaps in later ages they can research husbandry, to increase the size of the Guinea pigs and so the food rate.
-Military : Could make a case that all non melee units in the early going should also be equipted with a rock throwing sling? Units would be cheaper and be trained in larger numbers than the Europeans, but would still be 2nd to the Aztecs. In later ages perhaps that ranged weapon advantage would continue after they adopt muskets/guns etc. Early weapons would be less powerful than Europeans, but more powerful than the Aztecs and Iroquois I would think.
-Forts : Ability to construct more forts than other civ's, have a fort card also in the early going as well maybe?
Trading Posts : Would work at same speed as Europeans, (using Llama trains for transport) even in the early ages, Aztecs would be slower because they lacked transport animals.
